Quick Baking: English Banoffee Pie

The recipe for the pie is believed to have come from Jewington natives Nigel Mackenzie and Ian Dowding, owner and chef of the Hungry Monk restaurant. They claim to have created the dessert in 1971 by modifying an American coffee caramel pie recipe. The dish became so popular among visitors that it “simply could not be removed from the menu.”

The recipe was published in the book The Hungry Monk’s Stronger Secrets in 1974 and reprinted in the 1997 cookbook In Heaven with the Hungry Monk.

One of the most famous admirers of Banoffi was Margaret Thatcher, who loved to cook it herself.
